What is Up, Mac?

Yesterday we had a lengthy discussion on cam regarding Mac-and-Cheese. Well, it was mostly long winded because I have very strong opinions on this subject; and too, I love talking about food! 

I firmly believe, and this is a very strong opinion, that mac-and-cheese needs milk or heavy cream to keep it creamy. And, let’s face it, this dish is meant to be creamy, no matter how old you are! Pfft! Who says creamy goodness is only for kids? (No, seriously, someone said that during the discussion. I will give you two guesses as to who that might have been.)

How do you like your mac-and-cheese? Inquiring minds want to know! By that, I mean, I need to know. 

If you have a recipe, I would love for you to share it here.

    Skip the water.
    Pour in the pasta, then add milk & cream to cover. Bring to boil then simmer. Add in American cheese, cheddar cheese, a bit of salt, dash of ground mustard seeds & a bit of pepper.

    Once the liquid is absorbed & pasta is to the softness you prefer it is done.

    ‪First thing my mum taught me in the kitchen was how to make a white sauce (béchamel) – butter, flour, milk.
    Then we got fancy and added grated cheese to make a cheese sauce.
    Add the sauce to cooked macaroni …. voilà – Mac and Cheese…

    I always use a tasty cheddar cheese but also add a second variety, mostly gruyère…

    Boil your pasta to the way you like it. While the pasta is cooking, bring milk cheddar, munster, and swiss cheese to a boil. Once the cheeses begin to melt reduce the temp and let the flavors combine. At this point I like to add some bacon crumbles to the cheese mixture. when pasta is ready combine the drained pasta with the cheese sauce and enjoy.

      Notice I did not give measurements. Some people like more sauce while others like less sauce. Cooking is all trial and error when trying new things.
